We have a Austin Healey 3000 and the interior is very warm with the room up, What do you recommend as the most suitable for me to remove some of the heat from inside the car, Insulate the exhaust system or apply matting to the inside of the car.

The first thing to look at would be the heat source, if you can contain
this you stop most of the problem. You can wrap the exhaust:

There are a few options as you can see, they will all do the job, but
the thermo-tec wraps are a tougher material so are likely to last
longer, as a guide 1m of wrap will do roughly 1ft of 2" diameter pipe.

The other option would be to put heat insulation between the heat source
and the panels, you could use the self adhesive zircotec:

This is available in various sizes in 1, 2 and 3 layer

Aerotec is the other option, but this would need to be bolted or
riveted, but this is semi rigid so you could make a heat shield out of this.
